Barszcz Biały – Polish White Borscht Recipe

2 lbs fresh kiełbasa
2 large peeled potatoes cubed
3 cloves garlic minced
1 small onion finely chopped
8 cups water
1 1/2 cups sour cream
2 tbsp butter
1 bay leaf
2 tbsp chopped parsley
¼ tsp marjoram
¼ cup chopped fresh dill
¼ cup grated horseradish
4 hard boiled eggs sliced into wedges
Salt & Pepper to taste

Cook the kiełbasa in 6 Qt Dutch Oven on medium low heat for 30 minutes. Remove the kiełbasa to a platter and reserve the cooking liquid in a bowl, return the Dutch Oven to medium high heat, melt the butter and add onions and garlic cook until soft (do not brown).

Pour reserved cooking liquid into pot and add potatoes, marjoram, and bay leaf; cook until potatoes are soft about 30 minutes. Remove bay leaf and puree soup in blender, then return to pot and bring to a simmer.

Wisk sour cream and flour in a bowl until smooth, slowly add 1 cup hot soup to sour cream mixture while whisking . Pour soup, flour, and soup mixture into pot of soup whisking until thickened.

Mix horseradish into soup, add to serving bowls and garnish with parsley and dill. Serve with sliced kiełbasa and egg wedges.

Did You Know?

The first Polish settlers arrived in America 12 years before the Pilgrims. On October 1, 1608 they arrived at the Jamestown Virginia settlement about one year after the original English settlers on the banks of the James River.

It was because of the Polish craftsmen’s skills that they were invited to join the voyage on the ships Mary & Margaret to Jamestown. They were to establish a glass industry, but their first contribution was to construct a fresh water well which was badly needed to provide for the survival of the colony.

Living was hard, but despite the climate and living conditions they were able to export the first commercial products of glass, tar and pitch from America to England.

Because they were denied equal rights in the first Virginia Assembly they staged the first labor strike in America on July 30, 1619. The strike was not for money or because of working conditions; it was for equal voting rights and the same democratic rights of the English.

Polish Americans have much to celebrate at Thanksgiving and can be very proud of the contributions the first Polish settlers accomplished in America.

Smoked Kielbasa from Pulaski Meat Market
Sauerkraut
Imported Polish Podlaski Cheese
Thousand Island Dressing
Rye Bread
Butter

Ok You know what to do!
Cut kielbasa into bread length size and simmer with a package of sauerkraut and water to cover for about 20 minutes until suaerkraut is tender and keilbasa is warmed through, drain and hold.

Remove kielbasa links and slice lenghtwise.

Heat frying pan to medium high and melt pat of butter, add slice of rye bread layerd with sauerkraut, Thousand Island dressing, sliced kielbasa, Podlaski Cheese, and top slice of rye bread.

Cover frying pan and cook until bottom slice of bread is golden, flip sandwich when bottom is golden brown while adding more butter to pan and continue to cook until bottom bread is also golden brown and sandwich is heated through.

Plate and serve with with a Polish Dill Pickel and nice cold imported Polish Beer!
